Recipe Share Tuesday: Seafood Veggie Pasta

Seafood Veggie Pasta

Ingredients:
500 grams pasta (spaghetti or linguini)
250 grams shrimp (deveined with tail intact)
250 grams dory, cut into chunks
1 small broccoli cut into segments
1 green bell pepper, cut into squares
1 carrot, cut into chunky strips
4 garlic gloves, slivered
6 medium-sized tomatoes, cut into 4 and seeds removed
2 white onions or scallions, cut into 4 parts
fresh basil leaves
dried rosemary and thyme
salt and pepper to taste
parmesan cheese
extra virgin olive oil
parsley chopped

  1. Cook pasta based on package directions.
  2. In a separate pan, heat olive oil and saute garlic about one minute. Make sure that garlic will not brown or this will turn bitter.
  3. Add in tomatoes and onions and saute until slightly cooked. Add carrots and saute until half cooked.
  4. Add in shrimp and dory and the rest of the vegetables (broccoli, bell pepper and basil).
  5. Season with dried herbs. Add salt and pepper to taste. I would usually add olive oil after turning off the heat (olive oil retains its nutritional benefits when not succumbed to high heat).
  6. Put sauce on top of cooked pasta, top with parsley and sprinkle with parmesan cheese. Serve warm. 
* you can also add 1/4 cup tomato sauce if you want your pasta dish to be tamato based.
