Recipe Share: Roasted Herbed Chicken

Something to share in time for the holidays so you can maximize your spice rack :0

What You Need:

1 whole dressed chicken
2 tbsps. dried basil
1 tsp. dried oregano
1 tbsp. fresh rosemary, chopped
1 tsp. dried sage
1 tsp. dried thyme
1 tsp. pepper
1 tsp powdered garlic (optional)
pinch of salt
fresh pandan leaves or lemongrass leaves
melted butter
1 pack McCormick Chicken Pandan Marinade mix

Procedure:
1. Combine all herbs, salt and pepper in one small bowl. Season chicken with mixed herb ingredients, rub herbs on chicken cavities, inside of the wings and legs. Stuff inside of chicken with fresh pandan or lemograss leaves. In a separate bowl, dissolve pandan mix in water and marinade chicken for at least 3 hours (for best result, marinade overnight).

2. Brush chicken with butter and roast in turbo broiler over 150 degrees Celsius for 30-45 mins. or until done.

3. You can create a sauce by mixing the chicken sauce/drip with a little seasoning, butter, pepper and cornstarch. Boil in a saucepan over low heat until sauce thickens.
